This is a lovely light dish which is not only easy to make but really tasty if you are a smoked salmon lover. We often had smoked salmon with buttered bread on festive days, I would eat so much of it, I would lay off it until the next occasion. This is a lighter version with a great flavour combination. It certainly looks pretty in the centre of the table.
3 x packs of 100g smoked salmon (mixed variety),
Handful of radishes (sliced thinly),
1 x Segments of an orange,
1 x Lemon,
2 x Handfuls of pea shoots,
1 x tbsp of capers,
2 x tbsp of chives,
3 x tbsp of olive oil,
Black pepper to taste.
In a large platter, scatter the pea shoots,
Carefully take a slice of smoked salmon and roll loosely and place onto the platter,
Scatter the orange segments, radishes, capers and chives over the salmon and pea shoots,
Sprinkle freshly cracked pepper to your taste,
Drizzle the olive oil and lemon juice when you are ready to serve up,
I personally like this on its own, but you could serve with some sourdough bread or crackers.
