This is such a tasty Indian inspired one pot wonder. Packed with vitamins and nutrients from some of my favourite veggies, and enough spice and flavour to just comfort you so that you are satisfied. Haddock is known to be a great source of protein packed with omega-3 fatty acids which provide you with a wide range of health benefits. This works great as a lunch or dinner dish, served warm. I don’t feel I need anything to go with this, as its filling as it is.
2 x Smoked haddock (280g),
1 x Tinned chopped tomatoes,
3 x Sliced shitake mushroom,
1 x Small white onion,
1 x Garlic,
Half a courgette (sliced),
1 x tsp Garam Masala,
Half tsp Cayenne pepper,
Quarter tsp Tumeric,
150ml Vegetable stock,
Salt and pepper to taste,
Chopped coriander to finish (optional).
In a large pot, place all the ingredients apart from the smoked Haddock,
Allow everything to simmer for 15 minutes,
Add the haddock and place a lid on the pan on a reduced heat,
Cook for a further 15 minutes until the Haddock is cooked,
Serve with a sprinkle of coriander.
