Breakfast Wrap (Serves 2)

Ok, so you can find a wrap any fast food chain you go to, but how often are the ingredients they use of quality? My bacon is either too soggy or undercooked, my eggs are either overdone or have a rubber texture and the lettuce is all mushy, plus the portion sizes for the cost you pay are hardly worth the hassle of wasting your time eating something that has been prepared in a rush.  This is the meat version, however you can replace the meat for meaty mushrooms or veggie sausages which work just as well.



  • 2 x large soft tortilla wraps,

  • 6 x thick cut smoked bacon rashers,

  • 2 x handfuls of mixed leaves,

  • 2 x eggs,

  • 6 x smoky sun blush tomato (I use Belazu)

  • Sprinkle of chilli flakes,

  • 2 tbsp of extra virgin olive oil,

  • Salt and pepper to your taste.



  1. In a non-stick pan, heat and then add the bacon.  Turn after 5 minutes on each side. I quite like my bacon crispy, so I tend to leave a little longer,

  2. Once the bacon is ready, take out of the pan, clean with a kitchen towel, put back on the heat and add the oil followed by the eggs,

  3. While the eggs are cooking, pop the tortilla into the microwave for 10 seconds and place onto a plate ready for the fillings,

  4. When the eggs are ready, take off the heat and place to the side so you can start the assembling of the wraps.  I like my eggs with a runny yoke,

  5. Add a handful of the salad leaves to the tortillas, followed by the bacon, egg, chilli flakes, seasoning and then the sun blushed tomatoes,

  6. If you want to add some ketchup you can do so, however I find there is enough flavour in this that you do not need it,

  7. All thats left is tea or coffee to wash it down with.
