Tomato, Olive and Anchovy Starter (Serves 4 to 6)

Ingredients:

  • 3 x beef tomatoes,

  • 200g x marinated anchovies ( I used H Forman & Son),

  • Small jar of black marinated olives (The dry style),

  • 1 tbsp of dried oregano,

  • 3 tbsp of olive oil,

  • 2 tbsp capers,

  • Salt and pepper to taste,

  • 24cm platter (or a large dinner plate).

 

Method:

  1. Wash and slice the beef tomato, then arrange onto the platter.  I would add a little salt at this stage,

  2. place the anchovies on to of the tomato, followed by the black olives and capers,

  3. Sprinkle with the oregano, some black pepper, salt and the olive oil,

  4. You can prepare in the morning and store in the fridge until you are ready to serve,

  5. To serve I would grill some day old sourdough bread thats been rubbed with a little fresh garlic,

  6. This sits perfectly at the centre of the table allowing guests to help themselves.
