My special fry rice with a fried egg and greens (Serves 2)

This is something that’s come about this year.  It’s one of those dishes that are quick and fuss free to make and I usually turn to this when I have a mountain of things to do at home, but need something tasty and filling.  It’s also a dish I turn to towards the end of the week when the veggies in the fridge are still fine to use, but starting to get a little soft.

 

Ingredients:

  • 1 x cup of brown rice (I use Riso Gallo),

  • 1 x small courgette (chopped)

  • 3 x handfuls of spinach leaves,

  • 1 x sliced leek,

  • 1 x large garlic cloves (minced),

  • 1 cup of frozen peas,

  • 1 x red bell pepper (chopped),

  • 6 x broccolini,

  • 4 x baby corns (chopped)

  • 2 x bok choi (chopped),

  • 1 x large carrot (sliced),

  • 2 x spring onions (chopped),

  • 2 tbsp of soy sauce,

  • 1 tsp of fish sauce,

  • ½ tsp of turmeric, 

  • I tsp of paprika

  • ½ tsp of chilli flakes,

  • 2 x eggs

  • Salt to taste.

 

Method:

 

  1. Set a pan of water on the boil and then add the rice.  Cook according to packed instructions which for this type of rice is around 14 minutes.  I have one of those rice cookers for the microwave and the rice comes out perfect every time.  It’s also time saving too. I hate microwaves, so this is real progression for me,

  2. In a pan, add some oil (you can use sesame or olive oil) and gently fry the leeks until soft.  Add the courgettes along with the garlic, paprika, chilli and turmeric.  Gently fry until they start to soften,

  3. Add the remaining vegetables but make sure you start with the harder types and work your way to the softer types.  You want to make sure that you have a little crunch in the vegetables, so do a count down from 6 minutes.  The last veg you need to add to the pan would be the spinach.

  4. Drain the rice and add to the mixed veggies and then add your soy sauce and fish sauce. Make sure all is coated well and then taste.  If it needs more soy add more, but go light on the fish sauce as its quite a strong flavour and can quickly over take the dish,,

  5. In a frying pan add some oil and fry off two eggs, making sure to leave the yoke runny as that gives further flavour to the rice when your eating,

  6. Plate the fried rice to a bowl and top with the fried egg,

  7. I would break the yoke so that it pours over rice and eat with chopsticks.
