Puff pastry apple tarts (Makes 8)

These are so easy and quick to make, they are perfect for them last minute moments you need something ready, now. These are not too sweet, slightly addictive and certainly lighter on the calories. We had these by themselves, however they would work really well with a little cream on the side.



  • 320g x ready rolled puff pastry sheet

  • 2 x thinly sliced cooking apples (fresh from tree if you can)

  • 23 x Cape raisons (3 per tart)

  • 25g x flaked almonds

  • 2 tbsp golden caster sugar

  • 2 tsp ground cinnamon 

  • 1 x egg white

  • Drizzle of agave nectar

  • 1 x muffin tray

  • 1 x cookie cutter 


  1. Preheat the oven to 200 degrees / Gas mark 6,

  2. Roll out the puff pastry sheet on a floured surface and cut out 8 circles with a cookie cutter,

  3. Add the sliced apples to a clean bowl and mix in the sugar and cinnamon,

  4. Add each of the pastry circles to a greased muffin tray,

  5. Carefully add enough apple slices to fill each of the tarts,

  6. Top the tarts with 3 x raisons, flaked almonds and a sprinkle of caster sugar (optional),

  7. Place the tarts into the oven for 20 to 25 minutes until ready,

  8. Remove from he oven and plate up warm with a drizzle of agave nectar.
