Broad beans with pancetta (Serves 2)

September 30, 2017

Just like mum made them, the recipe just can’t be changed as I love eating these as a side with a good slice of bread.  There are only a few ingredients for this dish, and it doesn’t take too long to make either.

  • 250g x frozen broad beans,

  • 77g x pack of smoked pancetta,

  • 2 x sprigs of rosemary,

  • 1 x garlic clove,

  • 1 x large onion (thinly chopped),

  • 100ml of water,

  • Salt and pepper to season.

  1. Heat a drizzle of oil in a non stick pan and gently cook the pancetta for around 8 minutes, being careful not to burn,

  2. Add the onions, rosemary and garlic and cook for a further 10 minutes until soft,

  3. Add the broad beans, water and place a lid onto the pan ensure you have turned the heat right down,

  4. Stir occasionally and keep an eye that there is always a little liquid in the pan,

  5. Cook for around 20 minutes until the beans are tender and season well,

  6. Serve with a side salad and some good bread.
