Broad beans with pancetta (Serves 2)
September 30, 2017

Just like mum made them, the recipe just can’t be changed as I love eating these as a side with a good slice of bread. There are only a few ingredients for this dish, and it doesn’t take too long to make either.
Ingredients:
250g x frozen broad beans,
77g x pack of smoked pancetta,
2 x sprigs of rosemary,
1 x garlic clove,
1 x large onion (thinly chopped),
100ml of water,
Salt and pepper to season.
Method:
Heat a drizzle of oil in a non stick pan and gently cook the pancetta for around 8 minutes, being careful not to burn,
Add the onions, rosemary and garlic and cook for a further 10 minutes until soft,
Add the broad beans, water and place a lid onto the pan ensure you have turned the heat right down,
Stir occasionally and keep an eye that there is always a little liquid in the pan,
Cook for around 20 minutes until the beans are tender and season well,
Serve with a side salad and some good bread.
