Such a simple side dish, and such a tasty one too. These were always on the menu as a side at mums house alongside her grilled aubgerine and peppers. Hers were made simply with garlic and lemon, where as I had given it a little modernisation with some kicking flavours. Great with steak or BBQ’s as it has such a refreshing taste, I also add to my lunchbox if i have not bothered about my garlic breathe at work.
450g x fine green beans,
1 x clove of garlic (crushed),
2cm x piece of fresh ginger (grated, though use less if you wish),
1 x small lemon (juiced),
½ x tsp of chilli flakes,
1 x tbsp of olive oil,
Salt and pepper (to taste).
Place a pan of water on the boil,
Add the beans and boil for 4 to 5 minutes,
Strain in a colander and then add to a clean bowl,
Mix in all the ingredients and enjoy as a side,
Great warm or cold.
