Green beans with chilli & ginger (Serves 4)

Such a simple side dish, and such a tasty one too.  These were always on the menu as a side at mums house alongside her grilled aubgerine and peppers.  Hers were made simply with garlic and lemon, where as I had given it a little modernisation with some kicking flavours. Great with steak or BBQ’s as it has such a refreshing taste, I also add to my lunchbox if i have not bothered about my garlic breathe at work.

 

Ingredients:

  • 450g x fine green beans,

  • 1 x clove of garlic (crushed),

  • 2cm x piece of fresh ginger (grated, though use less if you wish),

  • 1 x small lemon (juiced),

  • ½ x tsp of chilli flakes,

  • 1 x tbsp of olive oil,

  • Salt and pepper (to taste).

Method:

  1. Place a pan of water on the boil,

  2. Add the beans and boil for 4 to 5 minutes,

  3. Strain in a colander and then add to a clean bowl,

  4. Mix in all the ingredients and enjoy as a side,

  5. Great warm or cold.
