Ham, Sun-dried tomato & Mozzarella Piadina (Serves 2)

Toasted ham & cheese sandwiches were always a 7pm snack on a Sunday evening in our house.  The smell of melted cheese wafted through the house and then the orders from different rooms would come flocking in. I use a non stick pan these days replacing the white bread for a multi seeded wholegrain tortilla on them Sunday evenings I want a little snack. I’ve had these are a small starter with a side salad, or sometimes batch cook them and have for lunch at work.

 

Ingredients:

  • 4 x multi seed soft tortilla breads

  • 1 x large buffalo mozzarella 

  • Pinch of dried oregano

  • 8 x sundried tomato

  • 4 x slices of good quality prosciutto

  • Drizzle of olive oil

  • Large non stick frying pan

 

Method:

  1. Place the non stick frying pan on a medium heat to warm up,

  2. Grab a tortilla and lay onto a chopping board,

  3. Add two slices of ham, 4 x sundried tomato and tear half of the buffalo mozzarella,

  4. Sprinkle some dry oregano, drizzle with oil and then top with the other tortilla,

  5. Carefully place into the pan to heat through between 3 and 5 minutes on each side,

  6. Repeat the process with the rest of the ingredients,

  7. Cut into four portions and enjoy.
