I love the texture, flakiness and taste of white fish when combined with good ingredients. As my partner is not a fan of fish, I tend to make this for myself every so often when I am alone, hence my bigger portions. I don’t do leftover or reheated fish, so must be freshly cooked.
2 x Haddock fillets
150g of Cannellini beans (I love Cirio Steam cooked)
400g tin of plum tomato
2 x Clove of garlic
1 x red onion (thinly sliced)
1 x tsp of dried oregano
Sprig of thyme
Salt & pepper to taste
In a pan (with lid), heat some oil, add the garlic and onion and cook until soft (not browned),
Add the drained beans and cook for a few minutes,
Add the plum tomato’s, lightly mash them,
Place the lid on the plan and allow the tomato’s to cook for 10 minutes,
Add the haddock fillets, seasoning, oregano, thyme and place the lid on the pan,
Cook on a low heat for up to 30 minutes,
Plate up, drizzle some oil on top of the fish and add any seasoning if needed.
