Cod loin with a mushroom medley (Serves 2)

Mum used to make a similar dish to this, however her version the fish is floured, fried and then placed into the sauce which is delicious, however I wanted a lighter version for them ‘I want summink healthy’ evenings.



  • 2 x Cod loins

  • 1 x Red onion

  • 2 x Garlic cloves

  • 1 x anchovy fillet

  • 1 x box of mixed mushrooms (chestnut, shitake, porcini etc)

  • Sprig of parsley

  • Drizzle of white truffle oil (optional)

  • Salt and pepper to taste


  1. In a saucepan, heat some water until it simmers,

  2. Meanwhile, heat a pan and gently fry the garlic and the onions until soft,

  3. Add the mushrooms and cook until tender,

  4. Season and add the parsley,

  5. Add the cod to the simmering water and cook for around 10 minutes until it starts to flake,

  6. Plate the mushrooms,

  7. Gently lift the cod out of the water with a slotted spoon so the excess water drains and plate on top of the mushrooms

  8. Season to taste and drizzle with a little oil,

  9. Serve with a side salad of your choice.
