You don’t often see me eating a lot of ice cream unless I am sitting abroad in the sun, however I do like this healthy option and tend to always have a batch in my freezer for them moments of need.
450g of mixed berries (Strawberry, Blueberry, Raspberry, Blackberry)
90g Golden caster sugar (add a little more if you would like it sweeter)
2 x 500g Greek yogurt (Full fat only)
Add the sugar and the berries to a food processor and blend well,
Add the berry mix to a clean bowl and whisk in the greek yogurt,
Cover and place into the fridge for an hour to chill,
Pour the mix into a churner for 30 minutes,
Enjoy either straight out of the churner, or spoon into a 2 litre tub and leave in the freezer until when you have a craving.
