Gnocchi with wild mushrooms (Serves 2)

This is a quick and simple recipe which I go to every so often when I have a busy evening.  As I am still trying out a few recipes for fresh gnocchi, I tend to buy pre-made packs in advance that can be stored in the cupboard until you need them.  This delivers all the flavors and satisfaction I need for my evening meal.



  • 1 x 500g pack of Gnocchi (I like Dececco)

  • 1 x box of fresh mixed wild mushrooms

  • 1 x garlic clove

  • 1 x red onion (thinly sliced)

  • 100g fresh baby spinach

  • 1 x Anchovy (optional)

  • Sprinkle of chilli flakes

  • Salt and Pepper to taste

  • Drizzle of white truffle oil (optional)


  1. Heat some oil in a frying pan and add the anchovy, chilli, onion and garlic and fry until soft

  2. Add the mushrooms and cook until they are soft

  3. Add the spinach, switch the heat off and place a lid on the pan to allow the heat of the plan winter the spinach

  4. Set aside to cook the gnocchi

  5. Bring a pot of salted water to the boil

  6. Add the gnocchi and cook for 2 minutes, or until they float up to the top of the pan

  7. Drain the gnocchi and add to the frying pan and stir so all is coated

  8. Spoon gnocchi into a clean plate and drizzle some white truffle oil
