Marinated Pork Belly (Serves 4)

Pork belly is something we would have had for New Years which was cooked with lentils.  It brought us luck for the new year.  Though I cannot claim that this will bring you all the luck in the world, I can guarantee you will enjoy it.  I had not eaten pork belly for a good few years and then decided to make it for a BBQ.  These are great served in some pitta with some salad.

 

Ingredients:

  • 4 x slices of pork belly (or a 500g pack)

  • 1 x pack of chilli & honey Mexican cook sauce by Capsicana

  • 2 x crushed garlic cloves

  • 1 tsp. of sweet paprika

  • 1 tbsp. of agave nectar

  • Sprig of fresh thyme

  • Salt & pepper

Method:

  1. Mix all the ingredients into a bowl and leave overnight to marinate

  2. Add to a hot BBQ (should be around 200 degrees) and slow cook in the middle of the grill for 25 minutes, making sure to turn every so often

  3. Move the pork to the side of the BBQ and to crisp up (but try not to burn)
