Prawns on Sourdough (Serves 2)

May 3, 2017

This dish contains all my favourite things; butter, garlic and prawns.  It’s such a simple, yet tasty dish and dad made this a lot when we would have our fish weekends.  It would always accompany a big plate of calamari and chips. It’s a great starter, though I like to have it on its own sometimes as one of my comfort dishes.

  • 150g King Prawns (I use a box per person)

  • 100g Plain Flour

  • 1 tbsp. dried Oregano

  • 3 x cloves of garlic

  • Salt & Pepper

  • 1 tbsp. butter

  • 30ml of white wine

  • 2 x large slices of good sourdough bread

  1. Rinse the prawns under cold water and then pat dry

  2. In a clean bowl add the prawns, seasoning, oregano and flour and toss until all is well coated

  3. Heat some oil in a non stick frying pan and gentle cook the garlic and chilli for a minute or two (do not burn the garlic)

  4. Add the prawns and stir

  5. When the prawns half way to ready, add the butter and the white wine

  6. When the prawns are ready (normally around 10 minutes) spoon the prawns onto the sourdough bread

  7. Spoon the sauce left in the pan over the prawns so the juices soak into the bread

  8. Eat whilst still hot, and do not reheat
