Bresaola, rocket and parmesan (Serves 2 / 3)

This is such a quick and simple starter that has a great combination of flavour. You can either serve as individual portions or sometimes I like to place in the centre of the table with other pickles, breads and cheeses for people to help themselves. 



  • 90g bresaola

  • 130g wild rocket

  • 25g parmesan (thinly sliced with a potato peeler)

  • Drizzle of white truffle oil

  • Pepper

  • Squeeze of lemon (optional)

  • 1 tbsp. salted capers (optional)


  1. Place a handful of rocket on a serving plate

  2. Arrange the bresaola and parmesan around the rocket salad

  3. Drizzle the white truffle oil; scatter the capers and season with black pepper

  4. Enjoy with grilled bread
